Easter (Week 14 of 52) #Project52


This Easter was really low key. I wish I had the time to do an Easter egg hunt for my family like I did a couple of years ago… I knew my schedule would be a little hectic this weekend with my girls program on Friday and Saturday and Easter on Sunday. I opted this year to make my son an Easter Basket filled with treats from the dollar tree. Since he has braces, we have to avoid candy as much as possible. I filled his basket with books, crossword puzzles, cotton candy and chocolate.  Easter Morning, I made the mister and me simple breakfast which included cheese grits, cheesy eggs, and waffles.

Spring (Week 13 of 52) #Project52



Spring?

Not really, however, Friday was the warmest it has been all year in my state. This could not have come at a better time. I was able to capture my daughters track meet. ( unfortunately, I didn't have my camera on the right setting) anywho, the pictures came out great and we enjoyed the weather.

My Veggie Garden Plans

 I'm so excited about my garden this year. This past year my garden produced a lot of fresh veggies. 

This past week. I stopped at my local Homedepot and noticed that they were having a huge sale on potting and garden soil. In the past years that was a huge problem of mine running out of dirt. Dirts not cheap and these bad boys were on sale for under $3.00. 

The bags of soil were still frozen together thus me not being able to purchase any that day. A nice gentleman at the store told me to come back later in the week. 

Me being me, I knew that their was a huge chance that I would miss out on this great bargain. 

Well while running arrands on Friday. I decided to stop by the same Home Depot and to my surprise. Just like the gentleman stated earlier in the week, there would be plenty left.  

I was also really excited because I had no idea that the soil was miracle grow brand and it was organic soil as well for under $3 for that size bag. I wanted to purchase at least ten. I spoke to the mister earlier in the week and I told him that I would get 4 or 6 bags. ( He Wasn't having me coming home with ten bags )

In the past I found soil on clearance at target the season prior and was able to store it in my garage and I still had to purchase more...

So I'm excited about the option to plant more veggies. It feels as if I'm in the store several times a week purchasing my staple items (peppers, tomatoes, onions, avocados) and I'm so over it. I love just being able to go in my back yard and grab whatever I need. 

I even have the mister excited about the garden this year. 

I plan on planting:
Tomatoes 
Peppers 
Green beans (new)
Potatoes (new) 
Cucumbers ( new) 
Spinach (new) 
Lettuce (not new but never grows) 

I also plain on trying miracle grow pods. I've heard rave reviews about this product. 

I do plain on purchasing plants as well and attempting again to  plant my own seeds.

No Bake 3 Ingredient Bars ( Week 12 of 52 ) #project52


Soooo, right now I'm on a no sugar/ flour challenge and I was beyond excited to find this recipe on Pinterest. This could possibly be a one bowl recipe. However, opted combine the honey and peanut butter on the stove.

I opted to use parchment paper and I did not have to add any oil or butter to assist with non-sticking.

I used a pizza cutter to cut these pretty large square because I'm pretty greedy.

Rule of Thirds (Week 11 of 52)

Playing around with the Rule of Thirds...





While minding my business, my sister called me to see if I wanted to go to one of our favorite consignment stores together. Me trying not to be an impulse shopper I decided to pass on the invite…So of cause naturally I was on the phone with her the entire time she was shopping. She stated that she came across these super cute Prada boots for toddlers. I asked her to text me a picture. What I didn’t notice at the time was she also texted me pictures of two fur coats. One coat being $100 and the other being $40. I immediately called her and asked if she could purchase the $40 coat and I would repay her (I have been searching for a cheap fur coat)... Of course I realized that I had a coupon to take an additional 15% off the total picture, she actually had the same coupon as well and offered to use hers. I paid a whopping $41 dollars for this gorgeous brownness coat of above and since Mother Nature is doing her thing we still haven’t been formally introduced to spring yet this year. I may get a couple of wears out of this bad boy until spring decides to show her face.

Green ( week 10 of 52)

This morning was one of those mornings where I wanted my food to get in my belly now! I was in the mood for waffles or pancakes. However, didn't feel like running to the store for milk. I opted to eat something that I had all of the ingredients at on hand. 

I decided to with a veggie omelette. What better way to start my morning off? Mushrooms, red onions, tomatoes, cheese and green peppers. 

I started off by sautéing everything except for the tomatoes and of course the cheese on medium heat. I used four eggs and waited for the veggies to finish sautéing and whisked the eggs in a bowl and added a dash of sea salt to the eggs.  I added the eggs to the mixture, and added the tomatoes and cheese once the omelette was almost finished cooking. 

Disclaimer: I'm not the best at making the perfect omelette. However, I do what works best for me.
