Today I'm Thankful For...



In 2012 I created a blog post about what I’m Thankful for. As I grow as a person. I try to think about what I’m Thankful for on a daily basis. This year, besides being thankful for my support system, I’m Thankful the ability to have “Experience”. The experience/opportunity to learn, meet new people, and the experience to grow as a person. Without Experience, I would not be the person that I am today. To be honest, I’m thankful for everything!!! Especially YOU!! Thanks for stopping by & Happy Thanksgiving.

Black Friday Shopping? Are you going?



I’m not sure why I’m in such disbelief about Thanksgiving just two days away (insert big eyes). The weather here has been pretty nice since Sunday. However, we’re getting snow tomorrow. I can’t remember that last time we got snow before Christmas. I’m sure the snow is not going to stop anyone from going black Friday shopping. Especially with stores opening as early as 5:00 pm, I’m really not sure what my plans are as of right now. I would love to pick up a couple of items here and there. Nothing to brag home about, you know griddle, waffle maker (stuff for the home). We usually go to the outlets out of state with the pending weather. However my decision will be based on whatever Mother Nature does. Especially since I’m the driver (insert: side eye)

Anywho, I really do not have an item in mind. Of course I want a big TV for under $200.

Menu Plan Monday week of 11/24/2014


Happy Monday! How was your weekend? If you follow me on Instagram you know if Zumba on Saturday and boy did I must say that I really underestimated the experience. Let’s just say that I could not keep up. I know the instructors say that you can do your own thing. However, I came to the realization on Saturday that I will probably not make the cut to be one of BeyoncĂ©’s background dancers, LOL just kidding.


Anywho… what’s on the menu this week?


Monday:  Spaghetti w/sausage 

Tuesday: Stir Fry (store brought)w/brown rice

Wednesday: Corn Chowder

Thursday: Happy Thanksgiving

Friday: White Bean soup w/garlic Bread

Saturday:  New Recipe 

 Sunday: TBD

Shrimp Teriyaki Recipe



Shrimp Teriyaki Recipe

This is another favorite recipe that I make all the time. It’s super simple and it reminds me of the one that is sold at my local mall food court. You know, the ones that give you a free sample and two minutes later you in line purchasing two meals. LOL. 

Ingredients:

1/2 cup soy sauce
2 tablespoons sugar
1 tablespoon oil
1 1/2 teaspoons cornstarch
2 garlic cloves, crushed
1 teaspoon minced fresh ginger
2 tablespoons water
2 lbs medium size raw shrimp (peeled and deveined)

Directions:

Blend soy sauce, sugar, oil, cornstarch, garlic, ginger, and water in a small pan.
 Simmer, stirring constantly til thickened about 1 minute cool.
Coat shrimp with sauce; drain off excess.
Place on rack of broiler pan, broil for 3-4 min on each side or till cooked.

Serve on a platter while hot.
